Openstax Anatomy and Physiology:

https://openstaxcollege.org/textbooks/anatomy-and-physiology/get.  Although this dynamic textbook is geared towards Human Anatomy and Physiology courses that are taught at most two- and four-year colleges and universities, this open source, free textbook has great, simplified explanations for both human anatomy and physiology concepts. The DSF course will be more detailed than this book, but for those who would like a well-written, easy to read overview, this is a good (and free) resource.
